Chicken macaroni
Here's a simple recipe for Chicken Macaroni
Ingredients
1 pound boneless, skinless chicken breast or thighs, cut into bite-sized pieces
8 oz macaroni
2 tablespoons butter
1 onion, diced
2 cloves garlic, minced
1 cup all-purpose flour
2 cups chicken broth
1 cup milk
1 teaspoon dried thyme
Salt and pepper, to taste
1 cup grated cheddar cheese (optional)
Instructions
Cook the macaroni: Bring a large pot of salted water to a boil. Cook the macaroni according to package instructions until al dente. Drain and set aside.
Cook the chicken: In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
Make the sauce: In the same skillet, add the remaining 1 tablespoon of butter. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
Add the flour: Sprinkle the flour over the onion mixture and cook for 1-2 minutes, stirring constantly.
Add the broth and milk: Gradually add the chicken broth and milk, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook until thickened, about 5-7 minutes.
Add the thyme and season: Stir in the dried thyme and season with salt and pepper to taste.
Combine the macaroni, chicken, and sauce: In a large mixing bowl, combine the cooked macaroni, chicken, and sauce. Stir until the macaroni is well coated.
Transfer to a baking dish: Transfer the macaroni mixture to a 9x13 inch baking dish.
Top with cheese (optional): If using, sprinkle the grated cheddar cheese over the top of the macaroni mixture.
Bake until golden brown: Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the top is golden brown and the macaroni is heated through.
