Chinese rice
Here's a simple recipe for making Chinese fried rice, a classic and delicious dish:
Ingredients
2 cups of cooked rice
2 tablespoons of vegetable oil
2 eggs (beaten)
1 small onion (chopped)
1 cup of mixed vegetables (e.g., peas, carrots, capsicum and cabbage)
2-3 tablespoons of soy sauce
1/2 teaspoon of sesame oil (optional, for flavor)
1/2 cup of cooked chicken, shrimp, or tofu (optional)
2 green onions (chopped, for garnish)
Salt and pepper to taste
Instructions
Prepare the Ingredients
- If not using leftover rice, cook the rice ahead of time and let it cool completely/Or take Fresh boiled rice.
- Chop all the vegetables and proteins you're using.
Scramble the Eggs
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
- Add the beaten eggs, scramble them, and cook until set. Remove from the pan and set aside.
Cook the Vegetables
- Add another tablespoon of vegetable oil to the pan.
- Sauté the chopped onion until translucent, then add the mixed vegetables. Stir-fry for 3–5 minutes until tender.
Add the Rice
- Push the vegetables to one side of the pan and add the cooled rice.
- Stir-fry the rice for 2–3 minutes, mixing it well with the vegetables.
Season the Rice
- Add soy sauce, sesame oil (if using), and season with salt and pepper.
- Stir everything together, ensuring the rice is evenly coated.
Combine and Serve
- Add the scrambled eggs and cooked protein (if using) back into the pan.
- Stir well to combine all ingredients.
- Garnish with chopped green onions before serving.
